Bread Pudding w/ Butter Pecan Rum Sauce

 

I had been wanting some bread pudding for about two weeks. I had tried bread pudding from many different places, but only liked it from maybe two. Eventually I decided that I would try to make my own. I looked through a few recipes and thought some were complex while others were very simple. After reading a few recipes, I decided to put my own twist on things.

Most of the recipes I came across used fresh bread.  I remembered seeing a Krispy Kreme cookbook with bread pudding it. I figured that if it could be made with donuts, that it could also be made with Little Debbie Spinwheels. So that’s what I used. To top it off I decide to make a butter pecan rum sauce.

And it was the BEST bread pudding I have ever had. Checkout the recipe below..

Bread Pudding Ingredients

5 boxes of Spinwheels (40 rolls)

6 whole eggs

1 cup of milk

1/2 cup of heavy whipping cream

1/2 cup of brown sugar

1 tablespoon of sugar

2 tablespoons of vanilla extract

Butter Pecan Rum Sauce Ingredients

1 cup of brown sugar

1 stick of butter

1 cup of heavy whipping cream

2 50ml bottles of rum

1 cup of chopped pecans

2 teaspoons of butter extract

Instructions / Directions

Break or cut all of your Spinwheels into halves or fours inside of a large bowl. Pour all of your ingredients on top. No particular order. Stir until everything is evenly mix. Pour into a 9.5×9.5 inch pan and bake at 350 degrees for 45 to 60 minutes. Check periodically.

Melt your butter in a sauce pan. After butter is melted, slowly add your heavy whipping cream. Bring to a boil and stir while adding your rum  and chopped pecans. Turn off the temperature and stir slowly until thickened.
