Vegan Chilli (RECIPE)

I’ve been seeing everyone post chilli on social media for the last two weeks. I’ve been wanting to try it and figured I’d make it a little different. So I did it all the way from scratch and VEGAN.

1 cup of black beans

2 cups of red beans

3 large tomatoes

1 small yellow onion

16oz package Beyond Beef

1/2 cup of cumin

1/2 cup of chilli powder

1 table spoon of salt

1 teaspoon of garlic powder

1. Boil the red beans and black beans in a stock pot on high heat with 3 cups of water for starters. Let boil for 2 hours. Stir and refill water when needed.

2. Dice tomatoes and onion.

3. After beans have boiled on high heat for 2 hours, add all of the spices, tomatoes, and onions.

4. Boil for one more hour. It’s okay for the water to run low in the final hour. Don’t add as much when refilling. Watch closely to stir more in the final hour to prevent sticking.

5. Enjoy!
