Chef Mimi of Soul with a Little Sass

Louisville, Kentucky native, Michelle Phillips became interested in food at the age of 8. At a young age, she always enjoyed watching others enjoy a home cooked meal. Now living in Austin, Texas, Phillips works for herself as a personal chef.
I got my start in my church’s kitchen when I was about 10. My paternal grandmother would cook and she told me I had to learn how to feed the people. Plus I was blessed to have both my great grandmothers teach me how to garden, fish and slaughter my own animals.
How did you come up with the name Soul with a Little Sass?
I cook Soul food with a healthy spin. I want you to still have the flavor you remember.
I would like my supporters to know that food is something you should eat to live, but not live to eat. We can have all things in moderation. Live outside of your comfort zone and try new cuisines.
What has been the greatest reward with on your culinary journey?
My greatest reward was at the height of Covid. Selling over 200 smoked or grilled dinners a day on the weekends. With the ability to turn a profit and also feed many seniors for free.
What’s your most popular dish? Tell me about it.
I would say I have two very popular dishes. One being my chicken and dumplings. I make everything from scratch including the broth. I use a whole chicken and roll out my own dumplings. I call it my soul in a bowl. The other dish that I am known for is my mixed greens. I can make a flavorful pot liquor that makes you dance. I take pride in seasoning them just so that you always come back for more.
Chef Mimi is currently in a competition titled Favorite Chef by Carla Hall. The prize is $25,000. If she wins, she’d like to buy a farm. It’s been a goal of hers to help others learn to grown their own foods and cook healthier. Click the following link to vote now.
